MEET | CATHERINE MCCORD

Featured 9.16-9.22.19 | One Family. One Meal. To anyone not raising young children, that might sound like a given. But to a busy mom who knows how challenging it can be to cook up healthy dinners that everyone in the family will actually eat, those four words might sound like a laughably optimistic ideal, one she's long since given up on. That's precisely why Catherine McCord used them as the subtitle of her debut cookbook, Weelicious, an inspirational kid-friendly feeding guide featuring 140 of her original fast and easy recipes. When her first child was born, the former actress and model found that the most challenging part of her new role as a mother was figuring out how to cook nutritious yet simple meals with flavors that would appeal to palates of all ages. Since McCord — a Kentucky native who lived in Paris and NYC before settling in Los Angeles — just happens to have a culinary school degree, in 2007 she decided to create the resource she hadn't been able to find. Weelicious.com (a precursor to the book) is a platform dedicated to helping non-chef parents see that preparing wholesome, delicious homemade food for their children doesn't have to be so complicated. Now a mom of three (Extra points: she home-birthed two of them. NBD), McCord has found herself back in front of the camera. In addition to the 300+ how-to cooking videos on her website, she's a regular on the morning show circuit. She published her second book, Weelicious Lunches, in 2013, and her third, The Smoothie Project, is scheduled for release in 2020. And that's not all. McCord has also got something else cooking: One Potato, a family-focused organic meal kit home delivery service (shipping pre-prepped ingredients!) that has a built-in charitable component, providing one meal to a family in need for every box it sells. From the kitchen to her current life goal: to travel to as many places as possible with her children — sans kids menus, s'il vous plaît, McCord is clearly one busy mother.
